Easy Zucchini “Pasta”

Do you suffer seasonally from overzealous zucchini in your or your neighbor’s garden? Are you bored with loafs of zucchini bread? Bothered by complicated lunches & looking for quicker options?

All kidding aside, this is a seriously easy recipe and a great way to grab what’s in the garden and throw together a quick, healthyish lunch. (If you didn’t have a high protein snack right before you make this, you may want to add some in for lasting power).

Ingredients:

1 medium large zucchini

1/2 jar Monte Bene Tomato Basil sauce

2 tsp chopped fresh basil

1 tsp Italian Seasoning

Dash garlic salt

Optional toppings:

Hemp seeds, pumpkin seeds, cooked Italian sausage, fresh basil, nasturtiums

Just pick, wash and spiralize a zucchini (you could also use a carrot peeler to make wider “noodles”). I use a Vegetti.

Then heat up some Monte Bene pasta sauce (we like this brand best because it’s the only one I’ve found that doesn’t add sugar and still tastes good)—i add 1 tsp of Italian herbs, 1-2 Tbsp of chopped fresh basil from the garden, and a dash of garlic salt to the sauce while it simmers, and top with whatever you like (here—hemp seeds and pumpkin seeds, nasturtium and more basil). You could also add sausage, ground beef or hummus for more protein. Viola! Lunch in less than 10 minutes—mostly grown at home. ‘‘Tis the season for fresh garden harvests!

***Also, though this meal is simple, i want to note that it follows an important component of mindful eating—-Eat with your eyes. Making your meal visually nourishing often leads to slowing down, enjoying your meal more, and eating less. You deserve to eat food that looks beautiful, you deserve to use the pretty plates, and your health will benefit when you do.
